The both of our Soba sauce is rich in flavor as it is made out of thoroughly boiled
dried Muneda bonito and dried mackerel bonito.The flavor and taste are Eastern
region style.Our restaurant not only serves Soba but we also have several
rice-based dishes.We use Nigata produced Koshihikari.

The oil that we use to make Tempura is a blend of 3 different types of oil: rice
oil and two types of vegetable oil.In order to enjoy the crispy texture, our butter
is made out of high quality wheat flour.

There is a quote "It often takes time to prepare Kabayaki(eel) of one’ actions:
pronging eel take 3 years filleting eel take 8 years to grill take for life."
As described,it is very difficult to cook eel.
At our restaurant, we prepare using fresh eel.
We also make original sauce.Please enjoy our eel that is delicious and rich in flavor.
